PANGASIUS
Scientific name: Pangasius bocourti; Pangasius.
hypophthalmus
Market names: Pangasius, bocourti, bocourti fish; Tra, River Cobbler,
swai
Description: Pangasius is a tasty fish, with a delicate texture and nice
white flesh. The fast- flowing waters of the Mekong give the meat a
clean, fresh flavor. Cooked meat is ivory colored.
Source: Pangasius are most commonly found in the waters of Vietnam. Most
farm-raised Pangasius are raised in An Giang and Can Tho province.
Harvest Season: Pangasius are available year-round.
Harvest Method: Farmed in floating cages and ponds.

Pangasius whole cleaned, fillets, fillet rolls, portion cut, steak,
strips, skewers, belly nuggets, skin, stomach.
SURIMI
Surimi is useful because it allows the manufacturer
to make a lower quality protein, imitate the texture and taste of a
higher quality product such as lobster tail. The resulting Surimi
products, depending on the type of fish used in the process, are
typically tasteless so they must be flavored, and contain 0-4 grams of
Fat with 0-1 grams of cholesterol while still yielding 6-30 grams of
protein per serving.
Typically Surimi products have been in imitation of other seafood
products, such as imitation crabstick, however several companies do
produce Surimi sausages, lunchmeats, hams, and burgers.

BLACK
TIGER SHRIMP
The black tiger shrimp are named for the dark stripes
that circle the shell which look like the stripes of a tiger. This
species is characterized by these stripes on its shell and it is the
largest of all commercially available shrimp and can grow up to 13
inches. Cooked meat is white with pink stripes.
The black tiger shrimp is available year-round and is one
of Vietnam's major aquaculture products. Most tiger shrimp is farmed,
though a significant amount is harvested from the wild by trawlers.
