Michele Sipiano's grandparents grew up in , one was a
farmer and a cheese
maker , the other was a fisherman and an artisan in
processing tuna, grouper
, swordfish and other valuable fish of the Sicilian sea.
PREGI DI SICILIA, always seeks the best of the best in

the Great dining tables, Grand Gourmets and all
connoisseurs worldwide.
The Mullet (from the Arabic " Batarikh " ) is a high
quality food. It is
made from fish eggs. In Sicily, which is at the center
of the Mediterranean
sea, the fishing of Red Tuna , (for its very precious
meat), yellowfin tuna,
grouper, amberjack , swordfish and mullet has been
practised since the time
of the Phoenicians.
The eggs are removed from these fine female fish which
are caught between
May and July and are extracted from the bowels of their
ovarian sacs , which
with skillful craftsmanship are salted with sea salt ,
and rubbed every two
days to remove all the excess liquid.
After more than a month the eggs are laid outside during
the sunny days of
summer, for the drying phase. At the end of this careful
process, the eggs
are selected and are only intended for the Best food and
beverages in the
world.
