Ingredients: 24 mussels
4 tablespoons olive oil
1 tablespoon dry white wine
1 tablespoon lemon juice
2 spring onions, finely chopped.
3 tablespoons chopped parsley
Freshly ground black pepper.
Method Remove meat from shells by steaming.
Add mussel meat
to remaining ingredients and toss thoroughly.
Allow to marinate in refrigerator 1/2 hour before serving.
