RECIPE FOR FISH FILLETS: Orange Roughy with White Wine

Ingredients:
4 orange roughy fillets (approximately 1 1/2lbs)
1 cup of medium white wine
1/2 cup of all-purpose flour
salt and pepper
1 tbsp of butter
1 onion finely chopped
1 tsp of capers (optional)

*Other firm white fish fillets can be used for this recipe

 

Method
Thaw orange roughy fillets. Rinse fillets and pat dry.

Melt butter in a saucepan and sauté the onion over a gentle heat until soft.

Stir in flour and cook, stirring, for 1 minute.

Add wine, stirring constantly to avoid lumps.

Add capers, season with salt and pepper.

Place orange roughy fillets in an oven pan, pour sauce over and bake at medium heat for 20 minutes or until fish fillets are cooked through.

Serve with steamed seasonal vegetables or salad.

Serves 4
