RECIPE FOR: Orange Roughy with White Wine

Ingredients:
4 orange roughy fillets (approximately 1 1/2lbs)
1 cup of medium white wine
1/2 cup of all-purpose flour
salt and pepper
1 tbsp of butter
1 onion finely chopped
1 tsp of capers (optional)

Method
Thaw orange roughy fillets. Rinse fillets and pat dry.

Combine flour and lemon-pepper seasoning.
Coat orange roughy fillets with the mixture and shake off excess.
Gently sauté in butter or oil until cooked through, approximately three minutes each side.

Serve with lemon wedges and seasonal vegetables.

Serves 4
