Method
Thaw orange roughy fillets.
Rinse fillets and pat dry.
Melt butter in a saucepan and sauté
the onion over a gentle heat until
soft.
Stir in flour and cook, stirring,
for 1 minute.
Add wine, stirring constantly to
avoid lumps.
Add capers, season with salt and
pepper.
Place orange roughy fillets in an
oven pan, pour sauce over and bake
at medium heat for 20 minutes or
until fish fillets are cooked
through.
Serve with steamed seasonal
vegetables or salad.
