RECIPE FOR:
Orange Roughy with White Wine
Ingredients: 4 orange roughy fillets
(approximately 1 1/2lbs)
1 cup of medium white wine
1/2 cup of all-purpose flour
salt and pepper
1 tbsp of butter
1 onion finely chopped
1 tsp of capers (optional)
Method Thaw orange roughy fillets.
Rinse fillets and pat dry.
Combine flour and lemon-pepper
seasoning.
Coat orange roughy fillets with the
mixture and shake off excess.
Gently sauté in butter or oil until
cooked through, approximately three
minutes each side.
