RECIPE FOR OYSTERS: Fresh Oysters, Oysters Kilpatrick and Cajun Shot

Ingredients:

Fresh oysters, serves 4
2 dozen fresh Moreton Bay rock oysters

Cajun shots, makes 12
1 dozen fresh Moreton Bay rock oysters
36oml tomato juice
45ml vodka
1 tablespoon Cajun spices
Tabasco sauce
45ml Worcestershire sauce
Cracked pepper

Oysters Kilpatrick, serves 4
2dozen fresh Moreton Bay rock oysters
Spring onion bulbs
Olive oil
Pancetta or parma ham
Sauce:
28oml tomato sauce
14oml Worcestershire sauce
juice of 1/4 lemon

Salt and pepper (optional)
Tabasco sauce to taste (optional)
 

Method - Fresh oysters
According to taste, fresh oysters are delicious served "au natural"; with freshly squeezed lemon or lime juice and cracked pepper; topped with Tabasco sauce, tomato, garlic and cream of lime, ginger and shallots.

Method - oysters Kilpatrick
Place all sauce ingredients into a bowl and whisk, add salt and pepper to taste if required. For a spicier mix add Tabasco sauce.

Roast spring onion bulbs in olive oil, cool and slice. Place a piece of spring onion under each oyster, then top with thinly sliced pancetta or parma ham. Spoon the sauce over the top and grill until the pancetta becomes crispy.

Important tip; do not overcook the oyster - it should only be hot, not cooked.

Method - Cajun shots
Combine all ingredients (except oysters) in a bowl and whisk. Drop an oyster into each chilled shot glass and fill to 3/4 with sauce.
