RECIPE FOR: Beer Batter for Fish and Seafood (2)

1-2  lbs. fish fillets
2  cups flour
1  12-oz bottle or can of beer
1  tsp. paprika
1  tsp. dried dill weed
1  tsp. dried chives
1  tsp. parsley flakes
1  tsp. garlic powder
  tsp. lemon zest
  tsp. orange zest
oil for frying

Rinse fillets. Mix flour and beer; if the batter is too thick, use more beer to make it thinner; for a thicker batter, use less beer. Add remaining ingredients to the batter. Dip the fillets in the batter and deep fry in pan of oil (375) until golden brown. Bake the fillets for 20-30 minutes at 350 until fish flakes apart.
