Ingredients: 30g butter
1-1/2 tablespoon plain flour
1-1/2 tablespoons mild curry powder
3/4 cup milk
150g Austrimi Seafood Highlighter, lightly separated with a fork.
Juice and rind of 1 lemon
1/4 cup frozen peas
1/2 capsicum, finely diced
1 sheet ready rolled puff pastry
1/2 cup grated cheddar cheese
20g butter, melted
1/4 cup sesame seeds.
Method Melt butter and add flour and curry powder. Cook 1-2 minutes then add milk.
Stir to a smooth sauce and add in seafood, lemon, peas and capsicum. Reserve.
To form the plat:
Lay pastry on a chopping board and visually divide into thirds. Do not cut.
Cut 10 strips on left third from pastry edge to centre third edge. Repeat on
right third. Place pastry on a greased oven tray and evenly spread filling down
centre third. Top with cheese. Fold and cut strips alternately over filling to
form plait. Brush with melted butter and sprinkle with sesame seeds. Bake at
180°C for 30 minutes. Serve as a luncheon dish with a tossed salad.
