RECIPE FOR: Swordfish with Mango-Tomatillo Relish

Ingredients:
1 Mango -- peeled and diced
1 medium Tomatillo, husked, washed
1/2 Red capsicum, seeded And minced
2 tb Fresh coriander finely chopped
2 tb Lime juice
2 kg Swordfish steaks
Ground black pepper -- to Taste

Method
Combine the mango, tomatillo, capsicum, coriander and lime juice. Set aside. Place the fish on a rack in a baking pan or use a grill pan and sprinkle fish with pepper. Bake in a preheated 220ºC oven for 12 minutes per inch of thickness. Serve with the relish on the side.
