RECIPE FOR:
Carpetbag Steak with Yabbies (Freshwater
Crayfish)
Ingredients: 6 steak fillets (with a
pocket cut)
1 1/2 kg yabbies
6 strips bacon
Method Peel yabbies and fill each
pocket with yabby meat. Wrap
fillet with bacon strip
And secure with a wooden pick.
Grill carefully - do not overcook.
Serve with Béarnaise Sauce.
