Hussar Fish (Lutjanus
Amabilis) Photographs

The hussar is a bright pink, with a yellow band along the lateral line. The
caudal fin is pink. It is a member of the perch family and it's flesh is firm and
very good eating.
The Hussar is a tropical fish and reef-dweller. It is a particularly strong
swimmer and is found from the Queensland/New South Wales border, north to Rockhampton.
The Hussar grows to a length of 46cm, although average fish are around 2-3 kg.
Habitat:
Saltwater and estuarine
Often caught near reefs, but some species more common on
offshore trawling grounds

Most seaperches
have superb white flesh and a delicate, yet generous,
flavour. They can be prepared in a wide range of ways
including grilling, poaching, deep frying, shallow frying,
baking and steaming.
Simple pan-frying allows for a range of different flavours
and textures to be utilised. Seaperches are often large, but
the smaller fish are excellent baked whole (gilled and
gutted).
